So, we believe it’s safe to say that the idea of a “green monster” has successfully infiltrated the blog world.
You have the classic smoothie, baked oats, overnight oats, and tonnes more! If you’re a food blogger, and you haven’t tried it yet… what the heck have you been up to?!? It’s seriously delicious, and crazy good for you. It’s one of our favourite ways to add veggies into a meal or snack that normally wouldn’t have any.
Because so much has been done with the Green Monster, we wanted to do something that hasn’t been done yet (or at least we haven’t seen!)
Without further ado:
It’s a monster!!
Green Monster Bread
Prep time: 10min
Bake: 45min- 1hr
Makes: 1 loaf (12-13 slices)
1 1/2c. whole wheat flour
1/2 c. white flour
1/2 c. sugar
1 1/2 tsp. baking soda
1 1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
3 overripe bananas
3/4 c. frozen spinach, thawed
1 Tbsp. honey (or other liquid sweetener)
1/4 tsp. almond extract (or vanilla)
1/4 c. vanilla yogurt
1/4-1/2c. walnuts (optional)
Pre-heat the oven to 350 C.
Grease a 9X5in. loaf pan.
In a large bowl, stir together dry ingredients.
In food processor, combine all wet ingredients (including the spinach!) and blend until smooth.
Mix wet into dry and stir in walnuts.
Pour into pan and bake for 45min-1hour, until loaf is firm and a toothpick comes out clean.
