We have a confession to make…
We both have a major sweet tooth! But when we say sweet tooth, we don’t mean candies, like fuzzy peaches and pixie stix, we mean decadent cakes, chocolate, home made cookies, chocolate, double-churned ice cream, chocolate, fresh baked cinnamon buns, and did we mention chocolate?
It’s a weakness.
Of course, our health conscious side does not allow us to indulge in these treats on a daily basis, so it became necessary to come up with healthy alternatives that don’t sacrifice flavour and sweetness.
The other day, when deciding what sweet treat to make for ourselves, brownies were at the top of our list!
They take us back to our mom’s home made chocolate chip brownies with sweet, messy chocolate icing. Mmmmm… drooling yet? Unfortunately, while the brownies are still yummy, the recipe needs some revising. We promise it will be up soon! However, the icing was a dead ringer!
And the best part? It only has 5 ingredients, and takes about 5min to make.
Healthy, satisfying, and friggin’ delicious!
Chocolate No-Cream Cheese Frosting
1/4c. coconut butter (not melted!)*
4 Tbsp. plain cottage cheese (we used 1%)
4 tsp. creamed honey
1 tsp. vanilla extract
2 tbsp. cocoa powder
1 tbsp milk
Put everything in the food processor and blend until creamy, scraping down the sides as needed.
* To make your own coconut butter, simply pour a FRESH bag of unsweetened coconut into a food processor and blend for 10-15min, until smooth and drippy, scraping down the sides as needed.
