Blue Velvet

Good morning! 🙂

We hope that everyone is enjoying their morning so far, because we certainly are! Why? We had pancakes for breakfast. Blue Velvet Cheesecake Pancakes, to be exact.


Oh, and they’re healthy.

We realize we’ve been on a bit of a blueberry kick lately,  having recently had this parfait, and this one, too, but if you had a big bag of frozen blueberries in your freezer, wouldn’t you do the same?


All it takes are a few simple substitutions and you can take pancakes from a nutritional pitfall to a breakfast of champions! Things like using whole wheat flour and fruits and natural sweeteners instead of refined sugars make pancakes as healthy as they are delicious, and you would never taste the difference!

These pancakes can also be made vegan, if you use non-dairy milk and yogurt, and replace the honey with a vegan sweetener.

These pancakes are made ‘cheesecake’ by the yogurt and frosting, so be sure to include them! 🙂

Blue Velvet Cheesecake Pancakes


Total Time: 10min

Serves: 2

For the pancake:

1/2 c. whole wheat flour

1/2 c. oat flour (or more whole wheat flour)

1 tsp baking powder

2 tbsp cocoa powder

2/3 c. frozen blueberries

2/3 c. milk

1 tsp vanilla extract

1 tbsp maple syrup

2 tbsp chia seeds

1/3 c. blueberries (optional)


1/2 c. plain greek yogurt

1/4 c. blueberry jam

1/2 c. blueberries

For the Frosting:

1 tbsp coconut butter (melted after measuring)

1/3 c. plain greek yogurt

1 tsp honey

1/2 tsp vanilla extract.


Mix all dry ingredients, set aside. Combine all wet ingredients (except for optional blueberries) and chia seeds in a blender, blend until smooth.  Add wet to dry and stir in blue berries if desired. Drop batter by spoonfuls onto hot pan, flipping once, until cooked. Spread yogurt, jam and blueberries between each pancake to form a stack, leaving the top bare. For the frosting, combine all ingredients and melt in the microwave for 15sec. Pour on top, sprinkle with additional blueberries and walnuts if desired.

    If so how do you protect against it, any plugin or anything you can advise?

    • Hi there! We used to get quite a few (2-3/week), but we haven’t had any in a long time. Through wordpress we have a spam collector, but I’m pretty sure that it’s always been there? I’m sorry this isn’t very much help, I’m afraid we’re not very good at the computer, behind-the-scenes aspect of blogging!
