Since coming back from our mini-vacation, we have been very low on snacks.  And by that we mean we have none at all.  This, of course, is not a good thing, since we often depend on having handy little snacks in the fridge that we can just throw into our lunch bags and head out the door on our way to work/track practice/appointments/wherever else we’re going.

We’ve been very busy since coming home, so we haven’t really had the time energy to make anything.  This, coupled with the fact that temperatures are back up into the thirties and we don’t want to turn our oven on too much, has left us standing in front of the fridge, scratching our heads trying to figure out what to pack for lunch.

What does all this mean?


You may recall that the last time we made a version of these tasty little treats, we were lamenting the fact that we had no good name for them.  However, upon reader suggestion, we have decided to call them bites!  (thanks, Julia!)

So today we bring you Chocolate-Peanut Butter-Banana Bites.

Unfortunately we now have another problem.  These things are not photogenic by any means.  We do not consider ourselves to be great photographers at the best of times, (although we’re working on it!) but believe us, it is really difficult to make a little brown ball look pretty for the camera!

Despite how they look, though, they really are delicious.  Just a few simple ingredients thrown into the food processor et voila, you have a quick and healthy treat.

We recently discovered that the baking aisle of our local grocery store has a whole bunch of different extracts, so we’ve been branching out lately from the traditional vanilla.  Today’s special addition is banana extract!  This stuff is amazing.  The first time we opened it up and gave it a whiff we both agreed it smelled exactly like those yummy banana Popsicles our mom used to buy for us in the summer.

Side note: if you’ve never had a banana Popsicle, you most definitely should!

Anyways, these bites are a great summer snack, since they don’t involve the oven, and they can be done in minutes, so give ’em a try! (you can eat one along with your banana popsicle 😉 )

Chocolate Peanut Butter Banana Bites

Time: 10 minutes

Makes: 10-12 “bites”


1/2 c. rolled oats

2 tbsp cocoa powder

1 c. dates

1/4 c. all natural peanut butter

1/2 tsp. banana extract


Pulse oats in the food processor until finely ground.  Add the cocoa powder and pulse to combine.  Add in dates and pules until the dates are finely chopped and you have a crumby mixture.  Add in peanut butter and banana extract and pulse until the peanut butter is fully incorporated and the mixture sticks together when pinched.  Form into balls and store in an air-tight container in the fridge.
