Today’s post is going to be simple and quick – just like the recipe!
Remember when we made the Tofu “Egg” Salad Sandwich? Well this time, we’re posting a real egg salad recipe!
It sort of tasted like a deviled egg in a sandwich, meaning it was extremely good and you should probably make it. 🙂
You might be a little weird-ed out by a couple of the ingredients, but trust us, it works. A little sweet, a little salty, very creamy, the perfect egg salad sandwich!
Honey Mustard Egg Salad Sandwich
Prep time: 5 min
3 hard boiled eggs
1/4 c. Plain greek yogurt
1 Tbsp honey
2 tsp dijon mustard
salt and pepper, to taste
dash of paprika
Mash eggs in a bowl and mix in all other ingredients. Spread evenly between two sandwiches, and put on desired toppings (We topped ours with lettuce and a dill pickle.).
