Well friends, today was the day!
Our wonderful mother jetted off to Salt Spring Island in British Columbia where she will be enjoying the retired life. She has swapped marking, black boards and noisy kids for hiking, vacations, picnics and whatever else suits her fancy! The lucky bum! 😉
Because B.C. is a 5 hr plane ride away, we won’t be seeing our mother for a few months now (except for on skype, of course!), so we had our own little send-off dinner for her.
Flat Rock 2010 Twisted – one of our favourites! This wine is so good, not oakey, lightly fruity, and so drinkable! (Is that a good thing? ;)) Living in the Niagara wine region is simple the best! 🙂
This was the perfect summer meal! We think tempeh is slowly rising to the top of our favourite foods- we just can’t seem to get enough of it lately! Great food, great weather, great company- life doesn’t get any better, friends!
We also couldn’t let our mom leave without bestowing on her some type of departure gift. And obviously our first instinct was to get into the kitchen and whip her up a tasty treat! A couple of weeks ago, she mentioned how much she really loved chocolate-coconut macaroons, and she would love it (hint, hint, wink, wink) if we made a healthy version of them. This, of course, was the perfect opportunity!
Very chocolatey with just the right amount of coconut. These macaroons are simply delicious, and contain no butter or refined sugar, just good, wholesome ingredients. We think they would make a fabulous treat to bring to a back-yard barbecue during the summer, because the recipe makes quite a few macaroons, and they are no-bake, which, as we’ve said before, is a major bonus when it’s 40 degrees outside (like it was for us yesterday!).
Right now, we have a big container of these in our fridge (although its getting smaller by the minute) since our mom could not take them on the plane with her, obviously. But don’t worry, mom, every time we eat one of these we think of you ;).
So are we sad that our mom has moved so far away? Of course! More than you can really know, but we are so excited for her and so happy to see her step into this exciting new time in her life, and we can’t wait to hear about all of the fun things that she is going to be doing in the coming years.
And as for now, we have a whole container of comfort food to to help us if we need it 😉 Just kidding. (sort of)

Chill Time: 1 hour
Serves: 25 macaroons
3 c. rolled oats
1/2 c. unsweetened shredded coconut
6 tbsp cocoa powder
1/2 c. coconut butter
1/4 c. honey
1/2 c. milk
1/2 tsp coconut extract (optional)
Combine oats and coconut in a large bowl. In a separate bowl, combine all other ingredients. Add to the oat mixture. Using wet hands, take 1 heaping tablespoon of the mixture and form into a little disc. Place on wax paper and refrigerate for an hour or until firm.
