WIAW: The Start of the Holidays

Happy What I Ate Wednesday everyone!

In light of a few upcoming exams, we’re going to keep this one pretty short and sweet, but we didn’t want to miss out on Jenn’s Party!

So here’s what’s been going on in our kitchen this past week…

This Butternut Squash and Chickpea Peanut Stew was certainly a highlight, and was perfect for the chilly temperatures we were having.  (Whatever happened to those we don’t really know- but we’re not complaining!)

And we got into the Christmas spirit when we made these Christmas pancakes with peppermint cream for breakfast. 🙂

Another soup of the Roasted Red Pepper variety graced our table- again, this happened when the weather was a little more seasonal!  This recipe will be coming soon 🙂

Another stack of Christmas-themed pancakes was had this week, this time with the seasonal drink, eggnog!  We seriously love this stuff!  We’ve been making a number of recipes using it, including…

And this eggnog cranberry overnight oats parfait!  If you don’t like eggnog… we apologize (but not really) 🙂

And since squash is still on for rock-bottom prices at the grocery store, we’ve made use of it in this Cranberry and Pear Lentil and Millet Stuffed Squash.

If you can think of a shorter name, feel free to give suggestions- our brains are way too occupied with the signs and symptoms of liver failure to think of names.  (thank you diet assessment exam!)
