We apologize for the lack of posting over the weekend, we are currently in the middle of final exams for first semester, so our posting may be a little bit more sporadic (not to mention short and sweet!), but we have lots of recipes to share with you all so we promise to do our best to keep them coming! 🙂
Without further ado – more eggnog!
And what a better progression from our last post but with a pancake-in-a-jar version?
We can honestly say we’ve fallen in love with this breakfast. It’s light and fluffy and takes less than 10 minutes to prepare -does it get any better?
Hmm… ya we didn’t think so either! 🙂
Eggnog Pancake in a Jar
Prep time: 5 min
Cook time: 3 min
1 c. whole wheat flour
1 Tbsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 c. Eggnog
1/4 c. milk
1 tbsp almond butter
1/2 tbsp honey
1/2 c. frozen cranberries
2 tsp honey
1/4 tsp cinnamon
1/4 tsp nutmeg
Sprinkle of cinnamon and nutmeg
Combine the wet and dry ingredients in separate bowls, then stir the wet into the dry.
Combine the cranberries, honey, cinnamon and nutmeg, then distribute evenly at the bottom of two medium-sized mason jars.
Spoon the batter evenly into each jar and cook in the microwave for 3 min or until firm to the touch. Top with desired toppings and enjoy!
Do you have a favourite breakfast? I don’t know if we can say we have one favourite, but pancake in a jar is definitely up there!
